Graševina is intended to be enjoyed with smoked fish, aged cheeses and nuts.
Hand-harvested grapes from a 33-year-old vineyard at full phenological maturity at 100 Oe, without late harvest elements. macerated for 6 days at a temperature of 20°C, then pressed and completed fermentation in 1000L wooden barrels (Slavonian oak) with malolactic fermentation. Fermentation started on our own yeasts, inoculated and selected after 4 days. After fermentation, the wine was kept on the lees without sulfur additions until spring 2021 with gentle stirring. In spring 2021, 30% of the wine went into barrique barrels for 6 months, after which it was blended in the fall and bottled. In bottles for almost 2 years before being released on the market.
